One Pan Easy Rustic Chicken Thighs
Ingredients
- 16 bone-in, skin-on chicken thighs(1200g)
- 22 tablespoon olive oil(27g)
- 31 teaspoon salt(6g)
- 40.5 teaspoon black pepper(1g)
- 52 tablespoon fresh rosemary(6g)
- 63 carrots(210g)
- 72 onions(300g)
Instructions
- 1Preheat your oven to 200°C (400°F).
- 2Place the chicken thighs in a large bowl. Drizzle with olive oil, then season with salt, black pepper, and chopped fresh rosemary.
- 3Massage the seasonings into the chicken thighs to coat evenly.
- 4Heat a large oven-safe pan over medium-high heat.
- 5Place the chicken thighs skin side down in the hot pan. Sear for 4-5 minutes until the skin is golden brown.
- 6Flip the chicken thighs and sear the other side for 2-3 minutes.
- 7Cut the carrots into large wedges and quarter the onions.
- 8Nestle the carrot wedges and onion quarters around the chicken in the pan.
- 9Transfer the pan to the preheated oven and bake for 25-30 minutes, or until the chicken is cooked through and the vegetables are tender.
- 10Remove from the oven and let rest for a few minutes before serving.
