Ingredients

  • 16 bone-in, skin-on chicken thighs(1200g)
  • 22 tablespoon olive oil(27g)
  • 31 teaspoon salt(6g)
  • 40.5 teaspoon black pepper(1g)
  • 52 tablespoon fresh rosemary(6g)
  • 63 carrots(210g)
  • 72 onions(300g)

Instructions

  1. 1Preheat your oven to 200°C (400°F).
  2. 2Place the chicken thighs in a large bowl. Drizzle with olive oil, then season with salt, black pepper, and chopped fresh rosemary.
  3. 3Massage the seasonings into the chicken thighs to coat evenly.
  4. 4Heat a large oven-safe pan over medium-high heat.
  5. 5Place the chicken thighs skin side down in the hot pan. Sear for 4-5 minutes until the skin is golden brown.
  6. 6Flip the chicken thighs and sear the other side for 2-3 minutes.
  7. 7Cut the carrots into large wedges and quarter the onions.
  8. 8Nestle the carrot wedges and onion quarters around the chicken in the pan.
  9. 9Transfer the pan to the preheated oven and bake for 25-30 minutes, or until the chicken is cooked through and the vegetables are tender.
