Ingredients

  • 1500 g Bread flour(500g)
  • 2350 ml Water(350g)
  • 310 g Salt(10g)
  • 4100 g Sourdough starter(100g)

Instructions

  1. 1In a large bowl, mix bread flour and water until combined. Let rest for 30 minutes.
  2. 2Add salt and sourdough starter to the dough. Mix until fully incorporated.
  3. 3Cover and let the dough rise at room temperature for 4-5 hours, folding every hour.
  4. 4Shape the dough into loaves and place in proofing baskets. Let rise for 2-3 hours.
  5. 5Preheat oven to 230°C (450°F). Score the tops of the loaves.
  6. 6Bake for 30-35 minutes until golden brown and crusty.
  7. 7Cool on a wire rack before slicing.
