Ingredients
- 1590 g kefir(590g)
- 2300 g spelt flour (type 630)(300g)
- 3300 g wheat flour (type 500)(300g)
- 410 g honey(10g)
- 516 g salt(16g)
- 67 g dry yeast(7g)
Instructions
- 1In a large bowl, combine kefir, spelt flour, wheat flour, honey, salt, and dry yeast.
- 2Mix until a sticky dough forms.
- 3Cover the bowl and let the dough rise overnight at room temperature or in the refrigerator.
- 4In the morning, shape the dough into rolls and place them on a baking tray lined with parchment paper.
- 5Let the rolls rest for 30 minutes.
- 6Preheat the oven to 200°C (392°F).
- 7Bake the rolls for 30 minutes.
- 8For a golden color, switch on the fan setting (convection) for the last few minutes of baking.
- 9Remove from the oven and let cool before serving.
