Ingredients

  • 11 lb ground beef(454g)
  • 22 cup full-fat cottage cheese(480g)
  • 31.25 cup shredded cheddar or Colby Jack cheese(140g)
  • 41 can Rotel (diced tomatoes and green chilies, undrained)(283g)
  • 51 teaspoon garlic powder(3g)
  • 61 teaspoon onion powder(3g)
  • 70.75 teaspoon chili powder(2g)
  • 80.5 teaspoon sea salt(3g)

Instructions

  1. 1Brown the ground beef in a skillet over medium heat. Drain excess grease if needed.
  2. 2While the beef cooks, blend the cottage cheese until completely smooth.
  3. 3Reduce heat to low and stir the blended cottage cheese into the beef.
  4. 4Add the shredded cheese, garlic powder, onion powder, chili powder, and sea salt. Stir until the cheese melts and the mixture is creamy.
  5. 5Stir in the Rotel (with some juice) and simmer for 3–5 minutes until thick and creamy.
  6. 6If the queso is too thick, add a splash of milk. Taste and adjust salt if needed.
  7. 7Serve warm with chips or vegetables.
