Ingredients
- 11 lb ground beef(454g)
- 22 cup full-fat cottage cheese(480g)
- 31.25 cup shredded cheddar or Colby Jack cheese(140g)
- 41 can Rotel (diced tomatoes and green chilies, undrained)(283g)
- 51 teaspoon garlic powder(3g)
- 61 teaspoon onion powder(3g)
- 70.75 teaspoon chili powder(2g)
- 80.5 teaspoon sea salt(3g)
Instructions
- 1Brown the ground beef in a skillet over medium heat. Drain excess grease if needed.
- 2While the beef cooks, blend the cottage cheese until completely smooth.
- 3Reduce heat to low and stir the blended cottage cheese into the beef.
- 4Add the shredded cheese, garlic powder, onion powder, chili powder, and sea salt. Stir until the cheese melts and the mixture is creamy.
- 5Stir in the Rotel (with some juice) and simmer for 3–5 minutes until thick and creamy.
- 6If the queso is too thick, add a splash of milk. Taste and adjust salt if needed.
- 7Serve warm with chips or vegetables.
