Ingredients

  • 1400 g cooked chickpeas(400g)
  • 260 g spelt flour(60g)
  • 31 egg(50g)
  • 420 ml olive oil(18g)
  • 540 g honey(40g)
  • 61 ripe banana(120g)
  • 71 teaspoon cinnamon(2.5g)
  • 81 teaspoon galangal(2.5g)
  • 90.5 teaspoon baking soda(2g)
  • 101 pinch salt(0.5g)
  • 1140 g 90% dark chocolate(40g)

Instructions

  1. 1Preheat the oven to 180°C (356°F).
  2. 2Rinse the cooked chickpeas thoroughly if using canned.
  3. 3In a blender or food processor, combine chickpeas, spelt flour, egg, olive oil, honey, ripe banana, cinnamon, galangal, baking soda, and salt.
  4. 4Blend until a smooth dough forms.
  5. 5Fold in most of the chopped dark chocolate, reserving some for topping.
  6. 6Transfer the dough to a baking dish or form cookies on a baking tray.
  7. 7Sprinkle the remaining chocolate on top.
  8. 8Bake for about 30 minutes at 180°C.
  9. 9Let cool before serving.
