Chickpea Chocolate Cookie Dough
Ingredients
- 1400 g cooked chickpeas(400g)
- 260 g spelt flour(60g)
- 31 egg(50g)
- 420 ml olive oil(18g)
- 540 g honey(40g)
- 61 ripe banana(120g)
- 71 teaspoon cinnamon(2.5g)
- 81 teaspoon galangal(2.5g)
- 90.5 teaspoon baking soda(2g)
- 101 pinch salt(0.5g)
- 1140 g 90% dark chocolate(40g)
Instructions
- 1Preheat the oven to 180°C (356°F).
- 2Rinse the cooked chickpeas thoroughly if using canned.
- 3In a blender or food processor, combine chickpeas, spelt flour, egg, olive oil, honey, ripe banana, cinnamon, galangal, baking soda, and salt.
- 4Blend until a smooth dough forms.
- 5Fold in most of the chopped dark chocolate, reserving some for topping.
- 6Transfer the dough to a baking dish or form cookies on a baking tray.
- 7Sprinkle the remaining chocolate on top.
- 8Bake for about 30 minutes at 180°C.
- 9Let cool before serving.
