Ingredients

  • 11 cup fruit of choice(150g)
  • 22.5 tablespoon honey(53g)
  • 31 tablespoon lemon juice(15g)
  • 40.33 cup water(80g)
  • 52 tablespoon unflavoured gelatin(18g)

Instructions

  1. 1In a saucepan over medium heat, add the fruit and water. Cook until the fruit softens.
  2. 2Mash the fruit thoroughly, using an immersion blender if available.
  3. 3Add honey and gelatin to the saucepan and whisk until dissolved.
  4. 4If using, add lemon juice and mix well.
  5. 5While the mixture is still hot, pour into silicone molds.
  6. 6Refrigerate for a few hours until set.
  7. 7For best texture, remove from molds after a couple of hours and leave uncovered in the fridge overnight.
