Ingredients

  • 1250 g semi-fat curd cheese(250g)
  • 2250 g Greek yogurt(250g)
  • 33 egg(150g)
  • 4150 g oat bran(150g)
  • 5125 g rolled oats(125g)
  • 650 g flaxseed(50g)
  • 730 g sunflower seeds(30g)
  • 850 g pumpkin seeds(50g)
  • 930 g walnuts or pecans (optional)(30g)
  • 100.75 teaspoon salt(4g)
  • 1115 g baking powder(15g)

Instructions

  1. 1Preheat the oven to 180°C (top and bottom heat or convection).
  2. 2In a large bowl, mix the curd cheese, eggs, and Greek yogurt until smooth.
  3. 3Add the oat bran, rolled oats, flaxseed, sunflower seeds, pumpkin seeds, walnuts or pecans (if using), salt, and baking powder to the wet mixture.
  4. 4Mix everything together and knead lightly until combined.
  5. 5Shape the dough into a loaf and place it on baking paper or in a loaf pan.
  6. 6Bake for 50 minutes.
  7. 7Remove from the oven and let the bread cool completely before slicing and serving.
