Ingredients

  • 16 Cherry tomatoes(90g)
  • 21 tablespoon Olive oil(13.5g)
  • 31 tablespoon Balsamic vinegar(16g)
  • 41 teaspoon Italian spice mix(2g)
  • 51 sheet Shortcrust or puff pastry(120g)
  • 660 g Burrata cheese(60g)
  • 75 leaves Basil(2g)

Instructions

  1. 1Preheat the oven to 180°C (356°F).
  2. 2Drizzle olive oil and balsamic vinegar onto a baking dish or tart pan.
  3. 3Sprinkle Italian spice mix evenly over the oil and vinegar.
  4. 4Arrange the cherry tomatoes on top.
  5. 5Cover the tomatoes with a sheet of shortcrust or puff pastry, tucking the edges in.
  6. 6Poke the pastry with a fork to allow steam to escape.
  7. 7Bake for 15 minutes or until the pastry is golden and crisp.
  8. 8Remove from the oven and let cool slightly.
  9. 9Invert the tart onto a plate so the tomatoes are on top.
  10. 10Top with burrata cheese and fresh basil leaves before serving.
