Southwest Chicken Skillet
Ingredients
- 12 pound chicken breast(900g)
- 21 packet taco seasoning(28g)
- 32 tablespoon olive oil(27g)
- 41 teaspoon salt(6g)
- 50.5 teaspoon black pepper(1g)
- 62 large bell pepper(300g)
- 71 can black beans(425g)
- 81 can corn(340g)
- 91 cup white rice(185g)
- 102 cup water(480g)
- 111 can enchilada sauce(300g)
- 121 cup Colby Jack cheese(113g)
- 130.5 cup sour cream(120g)
- 141 avocado(200g)
- 152 cup tortilla chips(60g)
Instructions
- 1Cube the chicken breast.
- 2Season the chicken with half a packet of taco seasoning, olive oil, salt, and pepper.
- 3Heat a large skillet over medium-high heat. Add the chicken and cook until halfway done.
- 4Chop the bell peppers.
- 5Add the chopped bell peppers, drained and rinsed black beans, and drained corn to the pan.
- 6Add the white rice, water, enchilada sauce, and the remaining half packet of taco seasoning.
- 7Mix well, cover, and let cook for 20-25 minutes, checking periodically to prevent burning.
- 8Once the rice is cooked and the chicken is done, turn off the heat.
- 9Top with Colby Jack cheese and let it melt.
- 10Serve with sour cream, sliced avocado, and tortilla chips.
