1Season the butterflied chicken fillets with smoked paprika, garlic granules, cayenne pepper, white pepper, and salt.
2Mix the crushed cornflakes and Doritos together in a shallow bowl.
3Dip each chicken fillet into the whisked egg, shaking off any excess, then press firmly into the crumb mixture until well coated all over.
4Place the coated chicken into the air fryer basket and cook at 190°C for 15 minutes, turning halfway, until cooked through. Alternatively, bake at 220°C (200°C fan) for 20-22 minutes.
5In a pan or microwave, gently warm the honey and hot sauce until loose.
6Once the chicken is cooked, brush a small amount of the hot honey glaze directly over the hot chicken fillets. Place a cheese slice on top of each fillet and allow it to melt slightly from the heat.
7Lightly toast the brioche buns.
8Spread the mayo over the base of each bun and top with shredded lettuce.
9Add the chicken, then spoon over the remaining hot honey glaze and scatter over the chilli flakes just before adding the top bun.
