One Pot Creamy Cajun Sausage Pasta

- 11 lb cajun style sausage(454g)
- 20.5 yellow onion(60g)
- 31 red bell pepper(120g)
- 414 oz fire roasted tomatoes(397g)
- 52 garlic cloves(6g)
- 62.5 cup beef broth(600g)
- 79 oz pasta(255g)
- 80.5 cup heavy cream(120g)
- 93 oz cream cheese(85g)
- 102 tablespoon olive oil(27g)
- 110.25 cup parmesan cheese(25g)
- 121 teaspoon salt(6g)
- 131 teaspoon black pepper(2g)
- 141 teaspoon paprika(2g)
- 150.5 teaspoon cumin(1g)
- 160.5 teaspoon thyme(1g)
- 171 teaspoon garlic powder(3g)
- 181 teaspoon onion powder(2g)
- 190.5 teaspoon cayenne pepper(1g)
Instructions
- 1Heat 1 tablespoon of olive oil in a large pot over medium heat.
- 2Add sliced cajun style sausage and cook until browned and crispy. Remove sausage and set aside.
- 3Add remaining olive oil to the pot. Add chopped yellow onion and diced red bell pepper. Sauté until softened.
- 4Add half of the prepared Cajun seasoning mix and stir.
- 5Add minced garlic and cook for 30 seconds until fragrant.
- 6Add fire roasted tomatoes and simmer for a few minutes.
- 7Pour in beef broth and add dry pasta. Stir to combine.
- 8Cover and cook, stirring occasionally, until pasta is al dente and most of the liquid is absorbed (about 10-12 minutes).
- 9Reduce heat to low. Add heavy cream and cream cheese. Stir until cream cheese is melted and sauce is creamy.
- 10Return sausage to the pot and add grated parmesan cheese. Stir to combine.
- 11Taste and adjust seasoning if needed. Serve hot.
