High Protein Breakfast Meal Prep Bowls
Ingredients
- 18 Eggs(400g)
- 22 cup Cooked brown rice(370g)
- 32 cup Cooked chicken breast(280g)
- 41 Bell pepper(120g)
- 52 cup Spinach(60g)
- 62 tablespoon Olive oil(27g)
- 71 teaspoon Salt(6g)
- 80.5 teaspoon Black pepper(1g)
Instructions
- 1Cook the brown rice according to package instructions and set aside.
- 2Dice the bell pepper and chop the spinach.
- 3Heat olive oil in a skillet over medium heat. Add bell pepper and sauté for 3-4 minutes.
- 4Add spinach and cook until wilted.
- 5In a bowl, whisk the eggs with salt and black pepper.
- 6Pour eggs into the skillet and scramble until cooked through.
- 7Dice or shred the cooked chicken breast.
- 8Assemble bowls by dividing rice, scrambled eggs with vegetables, and chicken breast evenly among 4 containers.
- 9Let cool, cover, and refrigerate for grab-and-go breakfasts throughout the week.
