Ingredients

  • 11 cup Mixed nuts(140g)
  • 20.5 cup Unsweetened shredded coconut(40g)
  • 32 tablespoon Chia seeds(24g)
  • 40.5 cup Almond flour(56g)
  • 52 tablespoon Butter(28g)
  • 62 tablespoon Erythritol (or keto sweetener)(24g)
  • 71 teaspoon Vanilla extract(4g)
  • 80.5 cup Strawberries(75g)
  • 90.5 cup Blueberries(74g)

Instructions

  1. 1Preheat oven to 325°F (163°C).
  2. 2Roughly chop the mixed nuts and combine with shredded coconut, chia seeds, and almond flour in a large bowl.
  3. 3Melt the butter and mix with erythritol and vanilla extract.
  4. 4Pour the wet mixture over the dry ingredients and stir until well combined.
  5. 5Spread the mixture evenly on a baking sheet lined with parchment paper.
  6. 6Bake for 15-20 minutes, stirring halfway through, until golden brown.
  7. 7Let the granola cool completely, then mix in chopped strawberries and blueberries.
