Ingredients

  • 11 whole chicken(1500g)
  • 22 teaspoon salt(12g)
  • 31 teaspoon black pepper(2g)
  • 42 tablespoon Cajun seasoning blend(14g)
  • 52 tablespoon neutral oil(28g)

Instructions

  1. 1Preheat oven to 375°F (190°C).
  2. 2Break down the whole chicken into halves. Carve the breasts clean, keep the legs bone-in. Save the carcass and trim for stock.
  3. 3Season the chicken halves generously with salt, black pepper, and Cajun seasoning blend.
  4. 4Heat a large oven-safe pan over high heat and add neutral oil.
  5. 5Place the chicken halves skin-side down in the hot pan. Place a weight on top to ensure full contact.
  6. 6Sear until the skin is deeply golden and crisp, about 5-7 minutes.
  7. 7Transfer the pan to the oven and roast for about 25 minutes, or until the internal temperature reaches 165°F (74°C).
  8. 8Remove from the oven and let the chicken rest for 5-10 minutes.
  9. 9Slice and serve with mashed potatoes and gravy if desired.
