Ingredients

  • 12 sheet puff pastry(500g)
  • 2150 g garlic and herb cream cheese(150g)
  • 3120 g smoked salmon(120g)
  • 41 teaspoon lemon zest(2g)
  • 51 egg yolk(18g)
  • 620 g parmesan cheese(20g)

Instructions

  1. 1Preheat the oven to 180°C (356°F).
  2. 2Roll out one sheet of puff pastry on a baking tray lined with parchment paper.
  3. 3Spread the garlic and herb cream cheese evenly over the pastry.
  4. 4Lay the smoked salmon slices on top of the cheese.
  5. 5Sprinkle lemon zest over the salmon.
  6. 6Cover with the second sheet of puff pastry and gently roll to seal.
  7. 7Use a star-shaped cookie cutter to cut out stars from the layered pastry.
  8. 8Arrange the stars in a circle on the baking tray to form a crown shape.
  9. 9Beat the egg yolk and brush it over the pastry stars.
  10. 10Sprinkle grated parmesan cheese on top.
  11. 11Bake for 20 minutes or until golden and crisp.
