Ingredients

  • 12 lb lean ground beef(907g)
  • 21 white onion(150g)
  • 34 garlic cloves(12g)
  • 41 tablespoon cumin(6g)
  • 51 tablespoon coriander(6g)
  • 61 tablespoon paprika(7g)
  • 71 tablespoon oregano(3g)
  • 81 tablespoon salt(18g)
  • 90.5 tablespoon black pepper(3g)
  • 101 tablespoon garlic powder(9g)

Instructions

  1. 1Preheat your oven to 400°F (200°C).
  2. 2Add the chopped onion and garlic cloves to a blender. Blend until completely liquefied.
  3. 3In a large bowl, add the ground beef. Pour in the onion-garlic mixture.
  4. 4Add cumin, coriander, paprika, oregano, salt, black pepper, and garlic powder.
  5. 5Mix thoroughly until fully combined.
  6. 6Divide the mixture in half. Place one half onto a large sheet of parchment paper. Top with another sheet of parchment paper and roll it out evenly.
  7. 7Remove the top layer of parchment. Roll the meat (with the parchment) into a tight log. Place on a baking tray. Repeat with the second half.
  8. 8Bake at 400°F (200°C) for 20 minutes.
  9. 9Remove from oven and drain excess grease.
  10. 10Unroll the meat logs and break into smaller chunks. Spread evenly on the baking tray.
  11. 11Broil for a few minutes until crispy and slightly charred.
