Ingredients

  • 14 cup all-purpose flour(500g)
  • 21 cup whole milk(240g)
  • 30.33 cup granulated sugar(67g)
  • 42.25 teaspoon active dry yeast(7g)
  • 50.25 cup unsalted butter(57g)
  • 62 egg(100g)
  • 70.5 teaspoon salt(3g)
  • 84 cup vegetable oil (for frying)(900g)
  • 92 cup powdered sugar(240g)
  • 100.25 cup whole milk (for glaze)(60g)
  • 110.5 teaspoon vanilla extract(2g)

Instructions

  1. 1Warm 1 cup of milk to about 43°C (110°F). Sprinkle yeast over the milk and let it sit for 5 minutes until foamy.
  2. 2In a large bowl, combine the yeast mixture, sugar, melted butter, eggs, and salt. Mix well.
  3. 3Gradually add the flour, mixing until a soft dough forms.
  4. 4Knead the dough on a floured surface for about 5 minutes until smooth and elastic.
  5. 5Place the dough in a greased bowl, cover, and let it rise in a warm place for 1 hour or until doubled in size.
  6. 6Roll out the dough to about 1.25 cm (1/2 inch) thickness. Cut out donuts using a donut cutter or two round cutters.
  7. 7Place the cut donuts on a parchment-lined tray, cover, and let them rise for another 30 minutes.
  8. 8Heat vegetable oil in a deep fryer or large pot to 180°C (350°F).
  9. 9Fry the donuts in batches for about 1 minute per side, until golden brown. Remove and drain on paper towels.
  10. 10For the glaze, whisk together powdered sugar, 1/4 cup milk, and vanilla extract until smooth.
  11. 11Dip the warm donuts into the glaze, then place on a wire rack to set.
