Steamed Bao Buns with Red Shrimp, Purple Cabbage, and Lime Mayonnaise
Ingredients
- 1260 g Type 00 flour(260g)
- 222 g Sugar(22g)
- 315 g Extra virgin olive oil(15g)
- 4135 g Water(135g)
- 54 g Salt(4g)
- 66 g Fresh yeast(6g)
- 7140 g Red shrimp(140g)
- 870 g Purple cabbage(70g)
- 950 g Mayonnaise(50g)
- 101 tablespoon Lime juice(15g)
Instructions
- 1Dissolve the fresh yeast in a little of the water.
- 2In a stand mixer or by hand, combine the flour, sugar, olive oil, remaining water, and dissolved yeast. Mix at low speed.
- 3When the dough is homogeneous, gradually add the salt and continue kneading until the dough is smooth.
- 4Shape the dough into a ball, place it in a covered container, and let it rise for 1 hour and 30 minutes or until doubled in size.
- 5Lightly oil the work surface, divide the dough into 7 pieces, and shape each into a ball.
- 6Flatten each ball with a rolling pin, place a piece of parchment paper in the center, and fold to form a pocket.
- 7Let the buns rise again for 40 minutes in a warm place.
- 8Steam the bao buns in a steamer or bamboo steamer for 15 minutes. Let cool slightly before filling.
- 9Prepare the filling: Clean and cook the red shrimp as desired. Thinly slice the purple cabbage.
- 10Mix the mayonnaise with lime juice to taste.
- 11Fill each bao with red shrimp, purple cabbage, and lime mayonnaise. Serve immediately.
