Chewy Lemon Sugar Cookies
Ingredients
- 10.5 cup unsalted butter(113g)
- 21.33 cup all-purpose flour(167g)
- 30.75 cup granulated sugar(150g)
- 41 tablespoon brown sugar(13g)
- 51 teaspoon vanilla extract(4g)
- 61 egg yolk(18g)
- 72.5 tablespoon lemon zest(5g)
- 80.25 teaspoon baking soda(1g)
- 90.5 teaspoon baking powder(2g)
- 100.25 teaspoon salt(1.5g)
- 110.25 cup granulated sugar (for coating, optional)(50g)
Instructions
- 1Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- 2In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- 3Add the egg yolk and vanilla extract, mixing until well combined.
- 4Stir in the lemon zest.
- 5In a separate bowl, whisk together the flour, baking soda, baking powder, and salt.
- 6Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- 7Scoop tablespoon-sized portions of dough and roll into balls.
- 8Roll each dough ball in the optional coating sugar, if desired.
- 9Place dough balls on the prepared baking sheet, spacing them about 2 inches apart.
- 10Bake for 9-11 minutes, or until the edges are set and the centers look slightly underbaked.
- 11Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
