Fried Hand Pies (Nashville Fair Style)
Ingredients
- 12 cup all-purpose flour(250g)
- 20.5 teaspoon salt(3g)
- 30.5 cup shortening(110g)
- 40.5 cup buttermilk(120g)
- 51 cup fruit preserves (peach, apple, or berry)(320g)
- 6500 ml oil for frying(460g)
- 72 tablespoon powdered sugar for dusting(16g)
Instructions
- 1Mix flour, salt, shortening, and buttermilk to form a dough.
- 2Roll dough into circles.
- 3Place a spoonful of fruit preserves in the center of each circle.
- 4Fold the dough over and crimp the edges to seal.
- 5Heat oil to 350°F (175°C) and fry pies until golden brown.
- 6Remove pies and drain excess oil.
- 7Dust with powdered sugar before serving.
