Ingredients

  • 12 cucumber(400g)
  • 21 cup edamame (shelled)(150g)
  • 31 red bell pepper(120g)
  • 40.25 cup fresh cilantro(10g)
  • 52 green onion(20g)
  • 62 tablespoon soy sauce(30g)
  • 71 tablespoon rice vinegar(15g)
  • 81 tablespoon sesame oil(13g)
  • 91 teaspoon sriracha(5g)
  • 101 tablespoon sesame seeds(9g)

Instructions

  1. 1Dice the cucumber and red bell pepper into small pieces.
  2. 2Cook the edamame according to package instructions and let cool.
  3. 3Chop the cilantro and green onion.
  4. 4In a large bowl, combine cucumber, edamame, red bell pepper, cilantro, and green onion.
  5. 5In a small bowl, whisk together soy sauce, rice vinegar, sesame oil, and sriracha.
  6. 6Pour the dressing over the salad and toss to combine.
  7. 7Sprinkle sesame seeds on top before serving.
