Ingredients
- 14 rasher bacon(120g)
- 21.5 cup Parmesan cheese(135g)
- 33 egg(150g)
- 41 pack spaghetti(500g)
- 50.25 cup Parmesan cheese (for topping)(22g)
- 61 teaspoon black pepper(2g)
- 71 tablespoon olive oil(13.5g)
Instructions
- 1Boil spaghetti in salted boiling water according to package instructions.
- 2Cube the bacon and pan fry in a drizzle of olive oil until crispy.
- 3In a large shallow bowl, add 2 whole eggs, 1 egg yolk, Parmesan cheese, and cracked black pepper. Whisk together to combine.
- 4Slowly add 2 ladles of starchy pasta water to the egg and cheese mixture, whisking constantly to avoid curdling.
- 5Add the cooked pasta to the bowl and toss through along with the bacon pieces.
- 6Top with extra Parmesan cheese and serve immediately.
