Crab-Stuffed Smoked Shrimp
Ingredients
- 12 lb jumbo shrimp(900g)
- 28 oz cream cheese(225g)
- 316 oz crab meat(450g)
- 40.5 cup shredded cheddar cheese(56g)
- 53 jalapeños(45g)
- 61 cup panko bread crumbs(50g)
- 72 tablespoon Cajun seasoning(14g)
- 81 stick unsalted butter(113g)
Instructions
- 1Preheat smoker to 225°F (107°C).
- 2In a large bowl, mix softened cream cheese, crab meat, shredded cheddar cheese, finely diced jalapeños, panko bread crumbs, and 1 tablespoon Cajun seasoning until fully combined.
- 3Roll the mixture into golf-ball sized portions.
- 4Butterfly each shrimp and lay cut-side down.
- 5Place a crab mixture ball on top of each shrimp and tuck the shrimp tail into the filling.
- 6Arrange stuffed shrimp on a smoker rack.
- 7Smoke at 225°F for 30 minutes.
- 8Meanwhile, melt unsalted butter and mix with 1 tablespoon Cajun seasoning to make the butter baste.
- 9Ten minutes before the shrimp are done, baste them with Cajun butter.
- 10Continue smoking until shrimp are cooked through and juicy.
- 11Serve hot.
