Ingredients

  • 12 cup all-purpose flour(240g)
  • 20.75 cup cocoa powder(75g)
  • 32 cup granulated sugar(400g)
  • 40.5 teaspoon salt(3g)
  • 52 teaspoon baking powder(10g)
  • 61 cup milk(240g)
  • 73 eggs(150g)
  • 80.5 cup butter(113g)
  • 92 teaspoon vanilla extract(8g)
  • 100.5 teaspoon almond extract(2g)
  • 112 cup cherries(300g)
  • 120.25 cup rum(60g)
  • 131.5 cup heavy cream(360g)
  • 140.5 cup powdered sugar(60g)
  • 150.5 cup shaved chocolate(60g)

Instructions

  1. 1Preheat oven to 350°F (175°C). Grease and flour a cake pan.
  2. 2In a large bowl, mix together flour, cocoa powder, granulated sugar, salt, and baking powder.
  3. 3Add milk, eggs, melted butter, vanilla extract, and almond extract. Mix until smooth.
  4. 4Pour batter into the prepared pan and bake for 30 minutes, or until a toothpick comes out clean.
  5. 5Let the cake cool, then cut it in half horizontally.
  6. 6In a saucepan, combine cherries, 2 tablespoons sugar (from the granulated sugar), and rum. Simmer for 5 minutes, then let cool.
  7. 7Whip heavy cream with powdered sugar and 1 teaspoon vanilla extract until stiff peaks form.
  8. 8Spread half the cherry mixture on the bottom cake layer, then top with some whipped cream.
  9. 9Place the second cake layer on top, spread remaining cherry mixture and whipped cream.
  10. 10Decorate the cake with shaved chocolate.
