Chocolate Shortbread Cookies
Ingredients
- 1150 g dark chocolate(150g)
- 2185 g wheat flour(185g)
- 330 g cocoa powder(30g)
- 4150 g salted butter(150g)
- 50.5 packet baking powder(6g)
- 6100 g brown sugar(100g)
- 72 pinch fleur de sel(1g)
Instructions
- 1Coarsely chop the dark chocolate with a knife or food processor and set aside.
- 2In a bowl, mix together the wheat flour, cocoa powder, and baking powder.
- 3Add the salted butter (cut into pieces), brown sugar, and fleur de sel. Mix with your fingertips until a homogeneous dough forms.
- 4Add the chopped chocolate and mix gently.
- 5Roll the dough into a log about 6 cm in diameter. Wrap in plastic wrap and refrigerate for at least 1 hour.
- 6Preheat the oven to 180°C (350°F) and line two baking sheets with parchment paper.
- 7Cut the log into slices about 1 cm thick and place them on the baking sheets, spacing them 3 to 4 cm apart.
- 8Bake for 8 to 10 minutes at 180°C. Let cool slightly or completely before serving.
