  • 11 kg Boneless chicken cubes(1000g)
  • 22 teaspoon Salt(12g)
  • 31 tablespoon Garlic powder or paste(9g)
  • 42 cup Plain flour(250g)
  • 51 cup Corn flour(120g)
  • 61 tablespoon Chilli powder(7g)
  • 71 tablespoon Black pepper(7g)
  • 81 tablespoon Oregano(3g)
  • 91 tablespoon Ginger powder(6g)
  • 101 teaspoon Garlic powder(3g)
  • 11250 ml Water(250g)
  • 12500 ml Oil(460g)
  • 13150 g Butter(150g)
  • 142 bulb Garlic (chopped)(100g)
  • 150.5 cup Soy sauce(120g)

Instructions

  1. 1In a large bowl, season the boneless chicken cubes with 1 teaspoon salt and 1 tablespoon garlic powder or paste. Mix well and set aside.
  2. 2In another bowl, combine plain flour, corn flour, 1 teaspoon salt, chilli powder, black pepper, oregano, ginger powder, and 1 teaspoon garlic powder to make the flour mix.
  3. 3Divide the flour mix into two equal portions.
  4. 4In a separate bowl, mix one half of the flour mix with 250 ml water to form a wet batter.
  5. 5Coat the seasoned chicken cubes first in the dry flour mix, then dip them into the wet batter, and finally coat again in the remaining dry flour mix.
  6. 6Heat oil in a deep pan over medium-high heat.
  7. 7Fry the coated chicken cubes in batches until golden brown and crispy. Remove and drain on paper towels.
  8. 8In a large pan, melt butter over medium heat. Add chopped garlic and sauté until fragrant.
  9. 9Add soy sauce, sugar, and honey to the pan. Stir and cook until the sauce thickens slightly.
  10. 10Add the fried chicken to the sauce and toss to coat evenly.
  11. 11Garnish with sesame seeds before serving.
