Nixtamalized Maseca Dough
Ingredients
- 12 cup Maseca (corn flour)(240g)
- 21 pinch Salt(0.5g)
- 30.5 teaspoon Cal (food-grade lime/calcium hydroxide)(2g)
- 41.67 cup Water(400g)
Instructions
- 1In a small amount of water, dissolve the calcium hydroxide (cal).
- 2Transfer the dissolved cal into a measuring cup and add enough water to make 1 and 2/3 cups total.
- 3In a large bowl, combine the maseca and a pinch of salt.
- 4Gradually add the cal-water mixture to the maseca, mixing until a smooth dough forms.
- 5Knead the dough until it is soft and slightly yellow in color.
- 6Shape or use the dough as desired for tortillas or other recipes.
