Ingredients

  • 12 cup Maseca (corn flour)(240g)
  • 21 pinch Salt(0.5g)
  • 30.5 teaspoon Cal (food-grade lime/calcium hydroxide)(2g)
  • 41.67 cup Water(400g)

Instructions

  1. 1In a small amount of water, dissolve the calcium hydroxide (cal).
  2. 2Transfer the dissolved cal into a measuring cup and add enough water to make 1 and 2/3 cups total.
  3. 3In a large bowl, combine the maseca and a pinch of salt.
  4. 4Gradually add the cal-water mixture to the maseca, mixing until a smooth dough forms.
  5. 5Knead the dough until it is soft and slightly yellow in color.
  6. 6Shape or use the dough as desired for tortillas or other recipes.
