Ingredients
- 11 teaspoon instant dry yeast(3g)
- 21 tablespoon sugar(12g)
- 3550 ml water(550g)
- 4575 g wheat flour (13% protein)(575g)
- 50.5 teaspoon salt(3g)
- 62 tablespoon olive oil(27g)
- 70.5 cup cold water (for baking steam)(120g)
Instructions
- 1Mix the yeast, sugar, water, flour, and salt in a bowl until combined.
- 2Let the dough rest for 30 minutes.
- 3Add the olive oil and mix, then let rest for another 30 minutes.
- 4Fold the dough and let it rest for 30 minutes.
- 5Fold the dough again and let it rest for another 30 minutes.
- 6Fold the dough one more time and let it rest for 30 minutes.
- 7Cut the dough into desired loaf shapes and place on a baking tray. Let rest for 15 minutes.
- 8Preheat the oven to 200°C (392°F).
- 9Add 0.5 cup of cold water to a tray in the oven for steam.
- 10Bake the bread for 20 minutes until golden brown.
