Ingredients

  • 11 teaspoon instant dry yeast(3g)
  • 21 tablespoon sugar(12g)
  • 3550 ml water(550g)
  • 4575 g wheat flour (13% protein)(575g)
  • 50.5 teaspoon salt(3g)
  • 62 tablespoon olive oil(27g)
  • 70.5 cup cold water (for baking steam)(120g)

Instructions

  1. 1Mix the yeast, sugar, water, flour, and salt in a bowl until combined.
  2. 2Let the dough rest for 30 minutes.
  3. 3Add the olive oil and mix, then let rest for another 30 minutes.
  4. 4Fold the dough and let it rest for 30 minutes.
  5. 5Fold the dough again and let it rest for another 30 minutes.
  6. 6Fold the dough one more time and let it rest for 30 minutes.
  7. 7Cut the dough into desired loaf shapes and place on a baking tray. Let rest for 15 minutes.
  8. 8Preheat the oven to 200°C (392°F).
  9. 9Add 0.5 cup of cold water to a tray in the oven for steam.
  10. 10Bake the bread for 20 minutes until golden brown.
