1Place bacon in a cold skillet. Turn heat to medium and cook 8–10 minutes until crispy. Transfer to paper towels.
2Divide beef into 2 equal portions (~170g each). Gently shape into patties slightly wider than buns. Press a small indent in the center. Season both sides just before cooking.
3Heat skillet or grill to medium-high. Cook patties 3–4 minutes first side, flip, cook another 3–4 minutes. Add cheddar during the last minute and cover to melt.
4Lightly butter or brush buns with bacon fat. Toast cut side down until golden.
5Whisk mayonnaise, Dijon mustard, ketchup, apple cider vinegar, smoked paprika, salt, and pepper together until smooth.
6Assemble: Bottom bun with sauce, lettuce, tomato, cheeseburger patty, crispy bacon, onion, pickles, top bun.
