Strawberry Bread with Strawberry Icing
Ingredients
- 12 cup fresh strawberries(300g)
- 22 cup all-purpose flour(250g)
- 31 cup granulated sugar(200g)
- 42 teaspoon baking powder(8g)
- 50.5 teaspoon salt(3g)
- 62 eggs(100g)
- 70.5 cup milk(120g)
- 80.5 cup vegetable oil(110g)
- 92 teaspoon vanilla extract(8g)
- 101 cup powdered sugar(120g)
- 110.25 cup fresh strawberries (for icing)(38g)
Instructions
- 1Preheat the oven to 175°C (350°F). Grease a loaf pan.
- 2Wash and chop the fresh strawberries. Set aside 1/4 cup for the icing and use the rest for the bread.
- 3In a bowl, toss the chopped strawberries for the bread with a tablespoon of flour to prevent sinking.
- 4In a large bowl, whisk together flour, baking powder, salt, and granulated sugar.
- 5In another bowl, whisk together eggs, milk, vegetable oil, and vanilla extract.
- 6Add the wet ingredients to the dry ingredients and stir until just combined.
- 7Gently fold in the floured strawberries.
- 8Pour the batter into the prepared loaf pan and smooth the top.
- 9Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
- 10Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
- 11For the icing, mash 1/4 cup strawberries and mix with powdered sugar until smooth and pink.
- 12Drizzle the strawberry icing over the cooled bread before serving.
