Healthy Grilled Shrimp Avocado Bowl
Ingredients
- 11 lb Large Shrimp(454g)
- 22 tablespoon Extra Virgin Olive Oil(27g)
- 33 clove Garlic(9g)
- 41 teaspoon Smoked Paprika(2.3g)
- 51 tablespoon Lemon Juice(15g)
- 61 cup Cooked Quinoa or Rice(185g)
- 71 large Avocado(200g)
- 81 cup Cherry Tomatoes(150g)
- 91 cup Cucumber(120g)
- 100.5 cup Sweet Corn Salsa(75g)
Instructions
- 1In a bowl, combine shrimp, olive oil, minced garlic, smoked paprika, and lemon juice. Toss to coat the shrimp evenly.
- 2Preheat a grill or grill pan over medium-high heat.
- 3Grill the shrimp for 2-3 minutes per side, or until pink and cooked through. Remove from heat.
- 4Divide the cooked quinoa or rice between serving bowls.
- 5Top each bowl with grilled shrimp, sliced avocado, cherry tomatoes, diced cucumber, and sweet corn salsa.
- 6Serve immediately and enjoy.
