Ingredients

  • 13 Egg(150g)
  • 20.5 cup Plain Greek yogurt (unsweetened)(120g)
  • 31 teaspoon Vanilla extract(4g)
  • 41.5 cup Almond flour(150g)
  • 51 tablespoon Baking powder(12g)
  • 60.25 cup Oil (olive or avocado)(55g)
  • 70.25 cup Alulose (or monk fruit sweetener)(48g)
  • 81 cup Mixed berries (fresh or frozen, e.g. blueberries, raspberries, strawberries)(140g)
  • 90.5 Banana (pieces, optional)(60g)
  • 101 teaspoon Oil or butter (for greasing pan)(5g)

Instructions

  1. 1Preheat the oven to 180°C (350°F).
  2. 2Grease a loaf pan with a little oil or butter.
  3. 3In a large bowl, beat the eggs.
  4. 4Add the Greek yogurt and vanilla extract to the eggs and mix well.
  5. 5Add the almond flour and baking powder to the wet mixture and combine thoroughly.
  6. 6Pour in the oil and mix until smooth.
  7. 7Add the alulose (or monk fruit sweetener) and stir to combine.
  8. 8Fold in the mixed berries and banana pieces.
  9. 9Pour half of the batter into the prepared pan, add some berries, then pour in the remaining batter and top with more berries if desired.
  10. 10Bake for 50 minutes, or until a toothpick inserted in the center comes out clean.
  11. 11Remove from the oven and let cool for 10-15 minutes before unmolding.
  12. 12Slice and serve.
