Sugar-Free Gluten-Free Berry Loaf
Ingredients
- 13 Egg(150g)
- 20.5 cup Plain Greek yogurt (unsweetened)(120g)
- 31 teaspoon Vanilla extract(4g)
- 41.5 cup Almond flour(150g)
- 51 tablespoon Baking powder(12g)
- 60.25 cup Oil (olive or avocado)(55g)
- 70.25 cup Alulose (or monk fruit sweetener)(48g)
- 81 cup Mixed berries (fresh or frozen, e.g. blueberries, raspberries, strawberries)(140g)
- 90.5 Banana (pieces, optional)(60g)
- 101 teaspoon Oil or butter (for greasing pan)(5g)
Instructions
- 1Preheat the oven to 180°C (350°F).
- 2Grease a loaf pan with a little oil or butter.
- 3In a large bowl, beat the eggs.
- 4Add the Greek yogurt and vanilla extract to the eggs and mix well.
- 5Add the almond flour and baking powder to the wet mixture and combine thoroughly.
- 6Pour in the oil and mix until smooth.
- 7Add the alulose (or monk fruit sweetener) and stir to combine.
- 8Fold in the mixed berries and banana pieces.
- 9Pour half of the batter into the prepared pan, add some berries, then pour in the remaining batter and top with more berries if desired.
- 10Bake for 50 minutes, or until a toothpick inserted in the center comes out clean.
- 11Remove from the oven and let cool for 10-15 minutes before unmolding.
- 12Slice and serve.
