Ingredients

  • 1250 g Spaghetti(250g)
  • 2120 g Smoked bacon(120g)
  • 32 Avocado(300g)
  • 410 g Basil(10g)
  • 52 tablespoon Lemon juice(30g)
  • 61 bulb Roasted garlic(40g)
  • 72 tablespoon Olive oil(27g)
  • 81 teaspoon Salt(6g)
  • 90.5 teaspoon Black pepper(1g)
  • 10150 g Tomatoes(150g)
  • 110.25 cup Pasta water(60g)
  • 121 lemon Lemon zest(3g)

Instructions

  1. 1Cook spaghetti according to package instructions. Reserve some pasta water.
  2. 2Chop bacon and cook in a pan with a little oil until crispy.
  3. 3In a blender, combine avocados, basil, lemon juice, remaining roasted garlic, olive oil, salt, pepper, and about 1/4 cup pasta water. Blend until smooth, adding more pasta water if needed.
  4. 4Add lemon zest to the sauce.
  5. 5Combine cooked pasta, bacon, chopped tomatoes, and sauce. Toss well.
  6. 6Serve immediately.
