Instructions

  1. 1Separate the egg whites from the yolks.
  2. 2Beat the egg whites until stiff peaks form, gradually adding 100g of sugar.
  3. 3In another bowl, whisk the yolks with the vanilla sugar and the remaining 70g of sugar until pale.
  4. 4Add the mascarpone to the yolk mixture and mix until smooth.
  5. 5Gently fold the meringue into the mascarpone mixture until fully combined.
  6. 6Refrigerate until ready to assemble the tiramisu.
