Mascarpone Cream for Tiramisu
Ingredients
- 13 egg(150g)
- 2250 g mascarpone(250g)
- 3170 g sugar(170g)
- 48 g vanilla sugar(8g)
Instructions
- 1Separate the egg whites from the yolks.
- 2Beat the egg whites until stiff peaks form, gradually adding 100g of sugar.
- 3In another bowl, whisk the yolks with the vanilla sugar and the remaining 70g of sugar until pale.
- 4Add the mascarpone to the yolk mixture and mix until smooth.
- 5Gently fold the meringue into the mascarpone mixture until fully combined.
- 6Refrigerate until ready to assemble the tiramisu.
