Baked Feta Chicken with Cherry Tomatoes
Ingredients
- 1500 g cherry tomatoes(500g)
- 230 ml extra virgin olive oil(27g)
- 315 g garlic(15g)
- 45 g dried oregano(5g)
- 53 g red pepper flakes(3g)
- 66 g salt(6g)
- 72 g black pepper(2g)
- 8680 g boneless, skinless chicken thighs or breasts(680g)
- 9200 g feta cheese, cubed or crumbled(200g)
- 1015 ml honey(21g)
- 115 g onion powder(5g)
- 125 g smoked paprika(5g)
- 1310 g fresh basil leaves, torn(10g)
- 145 g fresh thyme(5g)
- 1515 ml balsamic glaze (optional)(18g)
Instructions
- 1Preheat your oven to 200°C (400°F) and prepare a large 9x13 inch baking dish.
- 2Place the cherry tomatoes in the baking dish and toss them with olive oil, minced garlic, salt, and pepper.
- 3Season the chicken pieces thoroughly with onion powder, smoked paprika, and a pinch of salt.
- 4Nestle the seasoned chicken into the dish amongst the tomatoes.
- 5Add the feta cheese chunks into the spaces between the chicken and tomatoes.
- 6Drizzle the honey over the chicken and feta to help with caramelization.
- 7Scatter the fresh thyme sprigs and dried oregano over the entire dish.
- 8Bake for 25-30 minutes until the chicken is cooked through and the tomatoes have burst.
- 9Switch the oven to broil for 2-3 minutes to get a golden brown crust on the chicken and feta.
- 10Remove from the oven, garnish with fresh basil, and serve with the accumulated pan juices.
