Ingredients

  • 1200 g dark chocolate(200g)
  • 20.5 cup butter(115g)
  • 30.5 cup sugar(100g)
  • 40.5 cup brown sugar(100g)
  • 53 eggs(150g)
  • 60.25 teaspoon salt(1.5g)
  • 71 teaspoon vanilla extract(4g)
  • 80.5 cup all-purpose flour(75g)
  • 90.25 cup cocoa powder(35g)
  • 100.5 cup dark chocolate chunks(80g)
  • 110.5 cup nuts (optional)(60g)

Instructions

  1. 1Preheat oven to 175°C (347°F). Grease and line an 8x8 inch baking tin.
  2. 2Melt the dark chocolate and butter together in a heatproof bowl over simmering water or in the microwave. Let cool slightly.
  3. 3In a large bowl, beat the sugar, brown sugar, and eggs together until pale and doubled in volume.
  4. 4Add salt and vanilla extract to the egg mixture and mix well.
  5. 5Fold in the melted chocolate and butter mixture until just combined.
  6. 6Sift in the flour and cocoa powder. Gently fold into the batter until just combined.
  7. 7Fold in dark chocolate chunks and nuts if using.
  8. 8Pour the batter into the prepared tin and smooth the top.
  9. 9Bake for 25-30 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.
  10. 10Allow brownies to cool completely in the tin. For best results, refrigerate before cutting into squares.
