Instructions
- 1Sift together the cornstarch, flour, instant yeast, baking soda, and sugar in a bowl.
- 2In a separate bowl, whisk the egg, yogurt, lemon juice, and cooking oil until smooth. Stir in the lemon zest.
- 3Pour the wet mixture into the dry ingredients and gently mix until just combined. Do not overmix.
- 4Let the batter rest for 5–10 minutes to allow the yeast to activate.
- 5Heat a pan over medium heat. Pour batter onto the pan and cover with a lid. Cook for about 2 minutes per side, or until golden and fluffy.
