Stuffed Beef Rolls with Parmesan, Arugula, and Savory Sauce

- 1500 g Beef for Milanesa (topside, round, or similar)(500g)
- 21 teaspoon Salt(5g)
- 32 tablespoon Savora (mild mustard sauce)(30g)
- 450 g Parmesan cheese(50g)
- 530 g Arugula(30g)
- 60.25 cup White wine(60g)
- 72 tablespoon Soy sauce(30g)
- 81 tablespoon Honey(21g)
- 90.5 teaspoon Crushed red pepper (ají molido)(1g)
- 101 tablespoon Olive oil(13.5g)
Instructions
- 1Lay out the beef slices for milanesa, slightly overlapping them in a row.
- 2Season the beef with salt and brush generously with Savora.
- 3Sprinkle Parmesan cheese evenly over the beef.
- 4Add a layer of arugula on top of the cheese.
- 5Roll the beef tightly into a log and tie with kitchen twine to secure.
- 6Cut the roll into individual portions.
- 7Heat olive oil in a large skillet over high heat.
- 8Sear the beef rolls on all sides until golden brown.
- 9In a small bowl, mix white wine, soy sauce, honey, and crushed red pepper.
- 10Pour the sauce mixture into the skillet with the beef rolls.
- 11Cover and cook on medium heat until the sauce reduces and the beef is cooked through, about 10-15 minutes.
- 12Remove the kitchen twine before serving. Serve hot with the reduced sauce.
