Ingredients

  • 1500 g Beef for Milanesa (topside, round, or similar)(500g)
  • 21 teaspoon Salt(5g)
  • 32 tablespoon Savora (mild mustard sauce)(30g)
  • 450 g Parmesan cheese(50g)
  • 530 g Arugula(30g)
  • 60.25 cup White wine(60g)
  • 72 tablespoon Soy sauce(30g)
  • 81 tablespoon Honey(21g)
  • 90.5 teaspoon Crushed red pepper (ají molido)(1g)
  • 101 tablespoon Olive oil(13.5g)

Instructions

  1. 1Lay out the beef slices for milanesa, slightly overlapping them in a row.
  2. 2Season the beef with salt and brush generously with Savora.
  3. 3Sprinkle Parmesan cheese evenly over the beef.
  4. 4Add a layer of arugula on top of the cheese.
  5. 5Roll the beef tightly into a log and tie with kitchen twine to secure.
  6. 6Cut the roll into individual portions.
  7. 7Heat olive oil in a large skillet over high heat.
  8. 8Sear the beef rolls on all sides until golden brown.
  9. 9In a small bowl, mix white wine, soy sauce, honey, and crushed red pepper.
  10. 10Pour the sauce mixture into the skillet with the beef rolls.
  11. 11Cover and cook on medium heat until the sauce reduces and the beef is cooked through, about 10-15 minutes.
