Ingredients

  • 18 chicken pieces(1200g)
  • 21 cup cornmeal(120g)
  • 31 cup all-purpose flour(120g)
  • 41 teaspoon salt(6g)
  • 50.5 teaspoon black pepper(1g)
  • 61 tablespoon Cajun seasoning(7g)
  • 72 tablespoon soy sauce(30g)
  • 82 eggs(100g)
  • 91 cup buttermilk(240g)
  • 103 cup vegetable oil(690g)
  • 110.25 cup honey(85g)
  • 122 tablespoon hot sauce(30g)

Instructions

  1. 1In a large bowl, whisk together buttermilk, eggs, and soy sauce.
  2. 2Add chicken pieces to the bowl and marinate for at least 30 minutes.
  3. 3In another bowl, combine cornmeal, flour, salt, black pepper, and Cajun seasoning.
  4. 4Remove chicken from marinade and dredge each piece in the cornmeal-flour mixture until well coated.
  5. 5Heat vegetable oil in a deep pan or fryer to 175°C (350°F).
  6. 6Fry chicken pieces in batches until golden brown and cooked through, about 12-15 minutes per batch.
  7. 7Drain fried chicken on a wire rack or paper towels.
  8. 8In a small saucepan, combine honey and hot sauce. Warm gently and stir to combine.
  9. 9Serve fried chicken hot with the spicy honey drizzled on top or on the side.
