Ingredients

  • 12 egg yolks(36g)
  • 250 g brown sugar(50g)
  • 3150 ml heavy cream(150g)
  • 4200 g dark chocolate(200g)
  • 530 g butter(30g)
  • 62 eggs(100g)
  • 750 g powdered sugar(50g)
  • 820 g cocoa powder(20g)
  • 9100 g almond flour(100g)
  • 1050 g butter(50g)
  • 1150 g chocolate chips(50g)
  • 12200 g chocolate (for decoration)(200g)
  • 13100 g brownie batter (for decoration)(100g)

Instructions

  1. 1Prepare the ganache: Whisk egg yolks with brown sugar and heavy cream in a saucepan. Heat over medium heat until it starts to simmer.
  2. 2Remove from heat and stir in dark chocolate until smooth. Add butter and mix until well combined.
  3. 3Pour ganache into a bowl and let it set in the fridge for at least 3 hours.
  4. 4Prepare the brownie: Whisk eggs with powdered sugar. Add cocoa powder, almond flour, and butter. Mix until smooth, then stir in chocolate chips.
  5. 5Pour brownie batter into a round mold and bake at 180°C (356°F) for 20 minutes. Let cool.
  6. 6For the decoration: Melt the chocolate and spread onto a flat surface. Once it starts to set, use a comb to create fine lines. Cut out a circle slightly larger than the brownie.
  7. 7To assemble: Place the brownie on top of the set ganache. Gently lift the chocolate circle and place it on top of the brownie, pressing gently so it adheres.
