Ingredients

  • 1200 g light cottage cheese(200g)
  • 21 egg(50g)
  • 350 g light spelt flour(50g)
  • 40.5 teaspoon baking powder(2g)
  • 580 g apple (peeled)(80g)
  • 610 g erythritol(10g)
  • 70.25 teaspoon vanilla extract(1g)
  • 80.25 teaspoon cinnamon(0.7g)

Instructions

  1. 1Blend all ingredients except the apple until smooth and uniform.
  2. 2Cut the apple into thin slices and mix into the batter.
  3. 3Line a deep, wide ovenproof dish (about 15 cm diameter) with baking paper and pour in the prepared mixture.
  4. 4Bake in a preheated oven at 180°C (top and bottom heat) for 40–45 minutes.
  5. 5Remove from the oven and allow to cool.
  6. 6Serve plain or with your favorite toppings such as yogurt, nuts, or peanut butter. Optionally, dust with powdered erythritol if more sweetness is desired.
