Instructions

  1. 1Preheat oven to 200°C (390°F) or prepare air fryer.
  2. 2Dice the brown onion, garlic cloves, and jalapeño or pickles.
  3. 3In a large pan over medium heat, add diced onion and cook until softened.
  4. 4Add extra lean beef mince, salt, onion powder, garlic powder, and smoked paprika. Cook until beef is browned.
  5. 5Add diced garlic, jalapeño or pickles, and a splash of pickle juice. Stir to combine.
  6. 6Pour in Worcestershire sauce, yellow mustard, reduced sugar ketchup, and light mozzarella. Mix until well combined.
  7. 7Add cooked and diced beef bacon (or turkey/regular bacon) and mix thoroughly.
  8. 8Warm the tortillas. Place a portion of the beef mixture onto each tortilla.
  9. 9Top each with a little extra light mozzarella, 30g light grated cheddar cheese, and 30g burger sauce.
  10. 10Roll each tortilla tightly to form rolls.
  11. 11Spray the rolls lightly with cooking oil.
  12. 12Place rolls on a baking tray or in the air fryer basket. Bake or air fry until crispy and golden brown (about 10-15 minutes).
  13. 13For the burger sauce: In a bowl, mix light mayonnaise, low sugar ketchup, yellow mustard, grated pickle, pickle juice, paprika, garlic powder, onion powder, and salt. Adjust to taste.
