Ingredients

  • 1700 g ground meat (beef, lamb, or mixed)(700g)
  • 21 large onion, blended(150g)
  • 31 garlic clove, crushed(5g)
  • 41 tablespoon tomato paste(16g)
  • 51 tablespoon yogurt(15g)
  • 61 teaspoon ground cumin(2g)
  • 71 teaspoon pul biber (Aleppo pepper)(2g)
  • 81 teaspoon garlic powder(3g)
  • 91 teaspoon black pepper(2g)
  • 101 teaspoon salt(6g)

Instructions

  1. 1Preheat the oven to 220°C (428°F).
  2. 2In a large bowl, combine the ground meat, blended onion, crushed garlic, tomato paste, yogurt, cumin, pul biber, garlic powder, black pepper, and salt.
  3. 3Mix thoroughly until all ingredients are well incorporated.
  4. 4Place the meat mixture between two sheets of parchment paper.
  5. 5Flatten the mixture evenly with a rolling pin.
  6. 6Roll up the flattened meat tightly using the parchment paper.
  7. 7Place the roll on a baking tray and bake for 20 minutes.
  8. 8Remove from the oven, unroll, and tear the cooked meat into pieces.
  9. 9Serve hot with rice and salad or in pita bread.
