Ingredients

  • 1250 g Sirloin or flank steak(250g)
  • 231 ml Olive oil(28g)
  • 30.5 teaspoon Salt(3g)
  • 40.25 teaspoon Black pepper(0.5g)
  • 52 teaspoon Chopped parsley(2g)
  • 6300 g Baby potatoes(300g)
  • 722 g Unsalted butter(22g)
  • 82 clove Garlic(6g)
  • 90.25 teaspoon Dried thyme(0.2g)
  • 101 to taste Salt (for garnish)(1g)

Instructions

  1. 1Boil halved potatoes for 8 minutes until just tender. Drain and pat dry.
  2. 2Heat 2 tablespoons olive oil in a skillet over medium-high. Sauté potatoes cut-side down for 6–8 minutes until golden.
  3. 3Add butter, garlic, and thyme. Stir gently until garlic is fragrant and butter coats potatoes evenly. Transfer to a bowl.
  4. 4Season steak strips with salt and pepper.
  5. 5In the same skillet, heat 1 tablespoon olive oil. Sear steak 2–3 minutes per side until browned and cooked to preferred doneness.
  6. 6Return potatoes to skillet. Toss briefly with steak and garlic butter.
  7. 7Sprinkle chopped parsley over top. Serve immediately.
