Tuscan Style Slow Cooked Beef Roast
Ingredients
- 12 lb beef chuck roast(907g)
- 21 tablespoon olive oil(13.5g)
- 31 onion(110g)
- 42 carrots(120g)
- 52 stalk celery(80g)
- 63 clove garlic(9g)
- 72 cup beef broth(480g)
- 814 oz crushed tomatoes(397g)
- 91 teaspoon dried rosemary(1g)
- 101 teaspoon dried thyme(1g)
- 111 teaspoon salt(6g)
- 120.5 teaspoon black pepper(1g)
- 132 tablespoon fresh parsley(8g)
Instructions
- 1Heat olive oil in a large pot over medium-high heat.
- 2Season the beef chuck roast with salt and pepper.
- 3Sear the beef in the pot until browned on all sides, then remove and set aside.
- 4Add chopped onion, carrots, celery, and minced garlic to the pot. Cook until vegetables are softened, about 5 minutes.
- 5Return the beef to the pot. Add beef broth, crushed tomatoes, dried rosemary, and dried thyme.
- 6Bring to a boil, then reduce heat to low and cover.
- 7Simmer for 3-4 hours, or until the beef is tender and falls apart easily.
- 8Shred the beef in the pot and mix with the sauce.
- 9Garnish with chopped fresh parsley before serving.
