Guinness Beer Cheese Mac & Cheese
Ingredients
- 12 tablespoon butter(28g)
- 21 shallots(30g)
- 32 tablespoon all-purpose flour(16g)
- 41 tablespoon grainy mustard(15g)
- 51 cup Guinness beer(240g)
- 61 cup heavy cream(240g)
- 71 cup Irish cheddar cheese(113g)
- 81 cup cheddar cheese(113g)
- 91 teaspoon sriracha(5g)
- 1012 ounce orchetti pasta(340g)
Instructions
- 1Cook the orchetti pasta according to package instructions. Drain and set aside.
- 2In a large saucepan, melt the butter over medium heat.
- 3Add the chopped shallot and cook until softened.
- 4Stir in the flour and cook for 1-2 minutes to form a roux.
- 5Add the grainy mustard and pour in the Guinness beer, stirring constantly.
- 6Let the mixture simmer for a few minutes to cook off the alcohol.
- 7Pour in the heavy cream and let the sauce reduce and thicken.
- 8Add the Irish cheddar and regular cheddar cheese, stirring until melted and smooth.
- 9Stir in the sriracha for a touch of heat.
- 10Add the cooked orchetti pasta to the sauce and mix until well coated.
- 11Serve hot and enjoy.
