- 31 medium onion(150g)
- 43 tablespoon olive oil(40g)
- 52 tablespoon butter(28g)
- 61.5 cup shredded cheese(175g)
- 70.25 cup corn(40g)
- 810 small wheat tortillas(250g)
- 90 salt(5g)
- 100 black pepper(3g)
- 111 teaspoon smoked paprika(2g)
- 120.5 teaspoon garlic powder(1.5g)
- 130.5 teaspoon oregano(1g)
- 140.1 teaspoon chili powder(0.5g)
- 150.5 teaspoon honey(3g)
- 161 cup greek yogurt(250g)
- 171 lime lime juice(30g)
- 181 clove garlic(5g)
- 192 tablespoon fresh cilantro(4g)
Instructions
- 1Cut chicken into small cubes and marinate with olive oil, spices, lime juice, salt, and pepper.
- 2Slice peppers thinly and onion into half-rings.
- 3Cook chicken on a hot skillet for 4-5 minutes until golden, then set aside.
- 4In the same pan, sauté onion with a bit of oil for 1-2 minutes, then add peppers and cook until soft.
- 5Combine chicken back in, mix well, add cheese, and stir until melted.
- 6Warm tortillas in the microwave for about 20-30 seconds.
- 7Brush both sides of tortillas lightly with olive oil.
- 8Spoon filling into tortillas, roll loosely, and place in a baking dish.
- 9Top with cheese, corn, and melted butter.
- 10Bake at 375°F for 15-18 minutes until cheese is melted and golden.
- 11For lime yogurt sauce: Mix all sauce ingredients and chill before serving.
