- 14 cup All-purpose flour(500g)
- 20.5 cup Granulated sugar(100g)
- 31 teaspoon Salt(6g)
- 42.25 teaspoon Active dry yeast(7g)
- 51 cup Whole milk(240g)
- 60.25 cup Unsalted butter(57g)
- 72 Eggs(100g)
- 80.75 cup Brown sugar(150g)
- 92 tablespoon Ground cinnamon(12g)
- 100.25 cup Unsalted butter (for filling)(57g)
- 111 cup Powdered sugar(120g)
- 120.25 cup Cream cheese(56g)
- 132 tablespoon Milk (for icing)(30g)
- 141 teaspoon Vanilla extract(5g)
Instructions
- 1Warm the milk and melt the butter. Combine with sugar and yeast in a large bowl. Let sit until foamy.
- 2Add eggs, salt, and flour. Mix until a dough forms.
- 3Knead the dough for about 5-7 minutes until smooth. Cover and let rise for 1 hour or until doubled in size.
- 4Roll out the dough into a rectangle on a floured surface.
- 5Spread softened butter over the dough. Sprinkle with brown sugar and cinnamon.
- 6Roll up the dough tightly and cut into 12 even rolls.
- 7Place rolls in a greased baking dish. Cover and let rise for 30 minutes.
- 8Preheat oven to 180°C (350°F). Bake rolls for 20-25 minutes until golden brown.
- 9Mix powdered sugar, cream cheese, milk, and vanilla extract to make the icing.
- 10Spread icing over warm cinnamon rolls before serving.
