Ingredients

  • 14 cup All-purpose flour(500g)
  • 20.5 cup Granulated sugar(100g)
  • 31 teaspoon Salt(6g)
  • 42.25 teaspoon Active dry yeast(7g)
  • 51 cup Whole milk(240g)
  • 60.25 cup Unsalted butter(57g)
  • 72 Eggs(100g)
  • 80.75 cup Brown sugar(150g)
  • 92 tablespoon Ground cinnamon(12g)
  • 100.25 cup Unsalted butter (for filling)(57g)
  • 111 cup Powdered sugar(120g)
  • 120.25 cup Cream cheese(56g)
  • 132 tablespoon Milk (for icing)(30g)
  • 141 teaspoon Vanilla extract(5g)

Instructions

  1. 1Warm the milk and melt the butter. Combine with sugar and yeast in a large bowl. Let sit until foamy.
  2. 2Add eggs, salt, and flour. Mix until a dough forms.
  3. 3Knead the dough for about 5-7 minutes until smooth. Cover and let rise for 1 hour or until doubled in size.
  4. 4Roll out the dough into a rectangle on a floured surface.
  5. 5Spread softened butter over the dough. Sprinkle with brown sugar and cinnamon.
  6. 6Roll up the dough tightly and cut into 12 even rolls.
  7. 7Place rolls in a greased baking dish. Cover and let rise for 30 minutes.
  8. 8Preheat oven to 180°C (350°F). Bake rolls for 20-25 minutes until golden brown.
  9. 9Mix powdered sugar, cream cheese, milk, and vanilla extract to make the icing.
