Ingredients

  • 12 cup All-purpose flour(250g)
  • 20.5 cup Granulated sugar(100g)
  • 32 teaspoon Baking powder(8g)
  • 40.5 teaspoon Salt(3g)
  • 50.75 cup Milk(180g)
  • 60.25 cup Unsalted butter(57g)
  • 72 Eggs(100g)
  • 81 Vanilla bean(5g)
  • 94 cup Vegetable oil (for frying)(960g)
  • 101.5 cup Powdered sugar(180g)
  • 113 tablespoon Milk (for glaze)(45g)
  • 121 teaspoon Vanilla extract(5g)

Instructions

  1. 1In a large bowl, whisk together the flour, granulated sugar, baking powder, and salt.
  2. 2In a separate bowl, combine milk, melted butter, eggs, and scraped vanilla bean seeds.
  3. 3Add wet ingredients to dry ingredients and mix until a soft dough forms.
  4. 4Roll out the dough on a floured surface to about 1/2 inch thickness. Cut into donut shapes.
  5. 5Heat vegetable oil in a deep pot to 175°C (350°F).
  6. 6Fry donuts in batches until golden brown, about 1-2 minutes per side. Remove and drain on paper towels.
  7. 7For the glaze, whisk together powdered sugar, milk, and vanilla extract until smooth.
  8. 8Dip warm donuts into the glaze and let excess drip off. Place on a rack to set.
  9. 9Serve donuts warm, ideally with coffee.
