Ingredients

  • 1500 g Marinara sauce(500g)
  • 260 g All-purpose flour(60g)
  • 3150 g Italian breadcrumbs(150g)
  • 43 g Italian seasoning(3g)
  • 53 g Salt and black pepper(3g)
  • 6600 g Chicken breasts(600g)
  • 72 pieces Large eggs(100g)
  • 8200 g Fresh mozzarella cheese(200g)
  • 950 g Grated parmesan cheese(50g)
  • 102 g Garlic powder(2g)
  • 1130 ml Olive oil(27g)
  • 1210 g Fresh parsley(10g)
  • 131 g Dried oregano(1g)
  • 1410 g Extra parmesan cheese(10g)

Instructions

  1. 1Season the pounded chicken breasts with salt, pepper, and garlic powder, then dredge each piece in flour, dip in whisked eggs, and coat thoroughly with breadcrumbs.
  2. 2Heat olive oil in a skillet over medium-high heat and sear the chicken for 3-4 minutes per side until the breading is golden brown and crisp.
  3. 3Pour half of the marinara sauce into the bottom of a large baking dish and arrange the seared chicken breasts on top in a single layer.
  4. 4Spoon the remaining marinara sauce over each chicken breast, then top generously with shredded mozzarella and grated parmesan cheese.
  5. 5Place the dish in a preheated oven at 200°C and bake for 15-20 minutes until the chicken is cooked through and the cheese is bubbly and browned.
  6. 6Remove from the oven and immediately sprinkle with dried oregano and finely chopped fresh parsley.
  7. 7Let the dish rest for 5 minutes before serving to allow the sauce to set slightly, then serve with a side of pasta or a fresh salad.
